Mum's summer carpaccio, Perfect match for our Watervale Riesling

The perfect pairing with our 2019 Watervale Riesling... Mum's summer carpaccio with salmon or zucchini

Salmon

Finely slice Atlantic salmon and arrange on a platter

Squeeze lemon juice over fish and let cure for 30 minutes

Sprinkle finely cut pieces of cherry Tomatoes, red capsicums, cucumber, capers, chilli, dill or coriander, salt and pepper

Just before serving, pour good quality olive oil over the assembled dish

Serve with crusty bread as an appetizer 

Vegetarian Option

Finally slice zucchini as the base over the platter.

Cover with sliced cherry tomatoes, red capsicums, cucumber, capers, chilli, and salad/vegetables of your choice, coriander, salt and pepper

Once assembled squeeze generously with lemon juice and good quality olive oil

Serve with crusty bread as an appetizer
